Among all the tea party foods, maybe none are as quintessential as easy cucumber sandwiches! There they are, in the lower left of the tiered tray from the How to Host a Tea Party post.

Jump to RecipeThe extra-great thing about easy cucumber sandwiches is that they’re perfect not just for tea parties, but for any time! I love making myself a few just to snack on whenever I get the whim. And guests love them too – they’re so fun and unexpected!
And when I say “easy,” I mean REALLY easy! There are only five ingredients including salt, and you can adjust the proportions to suit yourself. Maybe you like more or less butter or dill. Maybe you like a thicker or thinner spread. The beauty of cucumber sandwiches is that you can make them in whatever way you want.
Easy Cucumber Sandwich Ingredients
The freshness of the ingredients is really the thing. Since you use so few of them, the better quality each one is, the better the finished sandwich.
All you need is a cucumber – I prefer English cucumbers because they usually have softer seeds and skin – some butter, bread, dill, and salt. That’s it.
The Easy Cucumber Sandwich Process
Let’s walk through the steps – they’re easy, and I’ll share my tips too.
1 – Cut your bread into rounds.
I like my cucumber sandwiches small and open faced. If you do too, then cut each slice of bread into two rounds – that seems to be about the right size for me. You can use a cookie cutter or just a small drinking glass to cut out the rounds.
Speaking of cookie cutters, if you want to make these for a special occasion, you can use a different shaped cutter for extra fun – like a star maybe, or flower, or heart, or etc!
2 – Prepare your cucumbers
Keep the skin on your cucumbers for additional color. And if you score the cucumber lengthwise with a fork before you cut it into rounds, you’ll have a lovely edge.
I like my cucumber to be about as thick as the bread slice, but again, slice yours as thick or thin as you want.
3 – Mix the butter and dill, and sprinkle the salt
This step is just exactly what it sounds like. Make sure your butter is very soft, and then mix in your minced dill until you have it as dilly as you want.
Then spread as thick a layer as you like onto your bread rounds, and sprinkle some salt on the top. I like to salt at this stage because it sticks to the butter better than to the cucumber!
Use the best salt you can get your hands on. I love Jacobsen’s flake sea salt. It’s delicious, and a bit crunchy too. It’s a great second texture, plus very hip! Your guests will be impressed.
4 – Put the cucumber on top
And then put a cucumber round on top!
5 – Decorate your easy cucumber sandwiches!
This is the fun part to my mind! After I’ve put all those easy cucumber sandwiches together, I put the rest of the dill butter into a pastry bag so I can squeeze a little dolop on top of each one.
Make sure your butter is very soft, and pat the cucumber with a paper towel so it’s pretty dry. If the butter’s too cold or the cucumber too damp, the butter won’t stick as well and might slip off.
(I really like using my pastry bag, but if you’d rather just use a spoon to put a little bit of dill butter on top, you could do that too.)
Put a little bit of dill frond on top for extra beauty and dill flavor, and you’re set to serve and enjoy!
Cucumber Sandwich Variations
The variations of course, are endless. You could use two pieces of bread, you could cut them into triangles, you could add extra spices, herbs, or cheese – whatever feels most fun to you.
If you want, you can keep these chilled in the refrigerator for several hours. (I like to serve them nice and cold.) You can make them a day ahead if you want. As long as you put that layer of butter over the bread, they shouldn’t get mushy.
If you have leftovers, you can store them in an airtight container in the refrigerator for a couple days. I like to line my container with a paper towel, just to absorb any moisture.

Easy Cucumber Sandwiches with Dill to Make Your Tea Party Delicious

Ingredients
8 Thin Bread Slices, cut into two rounds each1/4 Cup Butter, softened
1 English Cucumber
1-2 oz Fresh Dill
Salt to Taste
Directions
- Score the cucumber lengthwise with a fork, and cut into thin rounds
- Mince the dill, reserving a few fronds for garnish
- Mix about half the minced dill well into the softened butter, then add more to taste
- Spread a layer of the dill butter onto each bread round
- Sprinkle salt onto the butter
- Layer a cucumber slice on each round
- Put the remaining butter into a pastry bag, and squeeze a dollop onto each round
- Garnish with a tiny bit of the unminced dill
