Oh my – this strawberry crostini with whipped ricotta is possibly the most delicious appetizer I’ve ever – EVER – had! And that’s covering a lot of ground!

For my Milestone Birthday Party, I engaged a personal chef, Rebecca Clarke. (Which just let me say here, was one of the most fun things I’ve ever done!) This is her strawberry crostini recipe, and besides being absoutely fabulous, is super easy to make.
Plus it’s seriously impressive at a gathering, My guests and I were totally impressed! Give it a try and let me know what you think. I’m betting you’ll love it!
Strawberry & Whipped Ricotta Crostini
This recipe came from chef Rebecca Clarke for my Milestone Birthday Party! Absolutely delicious and super easy!
Ingredients
1 baguette
Whipped ricotta, recipe below
1 lb strawberries hulled & sliced
2Tbs mint, chiffonade
Balsamic reduction, recipe below
Black pepper
Directions
- Cut the baguette into slices on the diagonal
- Spread a layer of whipped ricotta on each
- Add sliced strawberries to the ricotta
- Drizzle the balsamic across the tops
- Garnish with mint and freshly ground pepper
- Whipped Ricotta
- INGREDIENTS:
1 1/2 Cups Whole milk ricotta cheese
1/4 Cup Extra-virgin olive oil
1/2 tsp kosher salt - In a food processor or blender, combine ricotta and ½ teaspoon kosher salt. Blend briefly to combine, then, with the motor running, slowly drizzle in the olive oil and continue processing on high speed until the ricotta is smooth and creamy, about 2 minutes.
- Balsamic Reduction
- In small saucepan, bring 1 Cup of balsamic to a boil.
Reduce heat, and simmer, stirring often, until it thickens to a syrup consistency.

I tried this when you shared the recipe after your fabulous birthday party , it’s delicious!
I did cheat and purchase a balsamic glaze , finding ripe strawberries makes all the difference.

Looks delicious ! I will make these for my daughters High School graduation open house. Question, pic looks like baguette was toasted? recipe doesn’t say anything about toasting
Hi Paul – oh these would be perfect for a graduation open house! I honestly don’t remember if they were toasted or not, but I bet they’d be good both ways. If you do toast them I think a little olive oil brushed on, then under the broiler till they brown up would be all you’d need. I should probably do a taste test just to see which way is best! 😊 Thanks for the great question, and let me know how you decide to do them and how they go over. Congrats to your daughter!

Oh Yummm! This is a definite MUST TRY! I’ve done a similar idea from Ina Garten with whipped feta and tomato, but this is the perfect summertime alternative!
