
Grapefruit Avocado Salad is one of my favorite dishes! Because it’s easy to make and the ingredients are available all year around, it’s perfect in any season. And it’s great with just about any main dish. Plus, it’s good for you!
And it’s fun to make!
This recipe is a hybrid. I first saw a grapefruit avocado salad in an issue of Eating Well magazine. The issue is long gone however, and I don’t remember if the ingredients were exactly the same or not. The dressing is a variation of one I originally got from Cooking Light magazine back in 2009.
Grapefruit Avocado Salad Ingredients

Here are all the ingredients – except I forgot to put the shallot in the picture! What was I thinking?! (The mustard is in the little white bowl. But because it was really bright in my kitchen, you can’t really see it in there. But it is – trust me.)
Grapefruit Avocado Salad
- Grapefruit (1 Large)
- Avocado (1 Large)
- Shallot (1/2 Medium, chopped fine)
- Pistachios (shelled)
Dressing
- Olive Oil (3 TBS)
- White Vinegar (1 TBS)
- Honey (1 tsp)
- Dijon Mustard (1 tsp or to taste)
- Salt (pinch or two)

Grapefruit

In a way, I can’t believe I came so late to the supreming party! My book group buddy told me how to do this only a few years ago. It’s a perfect way to get lovely grapefruit slices.
Be sure to use a nice sharp knife. First, you cut the ends off the grapefruit so it can sit flat.

Then cut the rind and the pith off by slicing down around the sides, following the curve of the fruit.

You could stop half way and turn the grapefruit over. But I just angle my knife and keep going all the way to the bottom.

There. Isn’t that pretty?

And see? I’m here to tell you that you can always keep learning! When I took these pictures a while ago, I was still separating the grapefruit segments by hand, above. Which is fun, but a little time consuming and very messy, as you’ll see in the upcoming photos.
Lesson Learned

But since then, I’ve learned an easier, faster, and less-messy way to get the segments out. They’re prettier too! Just cut in toward the middle, along a membrane, then cut in along the next membrane till the cuts meet in the middle. The segment will be separated and just sitting there daintily on your knife! Amazing!
So after you’ve got your segment, cut it into thirds, and put the pieces in a medium sized bowl. Add the rest as you cut them. When you’re all done, squeeze the membranes over the bowl for the juice.
Avocado

And when it comes to avocados, I’ve learned couple tricks too! Cut your avocado in half lengthwise. You’ll run into the pit of course, but just roll your knife all the way around it. Then twist the two halves open.

And here’s a great way to get little avocado cubes. (If your kids see you doing this, be sure to explain that you’re a grown up and are being very careful!)
Cut down into the front of the avocado, without going through the skin. Then draw your knife to the back, making a little slice.

Make slices all the way across, then slice crosswise to make little squares

Then, here’s the exciting part! Using a big spoon and staying along the skin, scoop out the whole half at once! You’ll get a lovely spoon full of tidy avocado cubes! When you’re done admiring them, add them to your grapefruit bowl.

And now, to get the pit out of the remaining half, do this other fun trick. (Another one not to let your kids do without supervision or metal gloves!)
Whack your knife down onto the pit. It’ll stick, which is very cool.

Then just twist and pull!
(To get the pit off the knife, push it down from the top. It’s easier – and safer – than trying to pull it off the blade.)

Then chop up your shallot and add to the bowl. Mix them all gently together. Although this is basically your grapefruit avocado salad right here, you get to dress it up a little.
Dressing

Making the dressing is easy. Just put all the dressing ingredients in a bowl and stir them up!

Or, you could put them in a jar or whatever, and shake them together. This vinaigrette is just tangy enough to balance the grapefruit avocado salad, and light enough to not overwhelm it.
Grapefruit and Avocado Salad

Arrange your grapefruit and avocado mixture on the plates. Sprinkle some pistachios on top and drizzle with the dressing.

And finally, add a pretty little garnish, in this case a chive blossom, to make it even fancier! You can make these ahead a few hours and put into the fridge – the citrus juice keeps the avocados from turning brown.
And then the best part – serve this yummy salad to your guests!
